A few weeks ago, I went to the freezer and noticed I had 2 pork loins about to expire. I made Chili Verde with one, which I posted and was featured on Weekend Potluck # 15. I didn’t know what to do with the other one. I cruised over to The Country Cook on Facebook and posted a request for her best pork loin recipe. When she responded, she gave me a link directly to a recipe from The Church Cook. I clicked on the link and copied down the recipe. Then I looked through the site and discovered that The Church Cook is from South Korea – this is a plus in my book because my grandson is ¼ Korean, and anything related to my little Prince Andrew, is good in my book. Another plus was the tremendous number of positive comments she had after each recipe.
I read the recipe, following it along exactly.

In the meantime, my mother called. She lives in an independent senior apartment complex where her two best friends also reside. Their names are Doris, Peggy, and Joan. Can you guess who each one was named after? Doris Day, Margaret Lindsey, and Joan Crawford. Doris (my mom) was a Medical Technologist for 40 years, Peggy a High School Home Ec. Teacher for 35 years, and Joan was a long-haul truck driver with her husband for 35 years. They are all widowed.

I told her I was making a pork loin and some rolls that I would bring to her later and to ask Peggy what they should make to complete the meal. I and Mr. Picky tasted it prior to sending it over. We both determined that it was delicious.
Fast forward to this past Monday where I got a call from mother telling me she had dropped off a pork loin at the house. I told her that she did not have to repay me by bringing a replacement because I had to cook the meat anyway. She let me know that they were not repaying me, they were asking me to make another for them! They told me the three of them ate the entire loin in one sitting and that it was delicious, so delicious they had all been craving it. Then she wanted a date that I would be bringing it over.

Tangy Glazed Pork
Here are the ingredients you will need:

2 teaspoon rubbed sage

1 teaspoon salt

1/2 teaspoon pepper

2 cloves of garlic crushed (I used freshly minced garlic since 12 loins needed to be cooked)

1 (5 pound) boneless pork loin or pork roast of choice

Sauce

1 cup sugar
2 tablespoon cornstarch
1/2 cup vinegar
1/2 cup water
4 tablespoons soy sauce

Preheat oven to 325 degrees F.
Bring your pork to almost room temperature before baking.

In a bowl, mix sage, salt, pepper, and garlic, thoroughly and then rub all over the pork roast. Cook in an uncovered roasting pan on the middle oven rack for approximately 3 hours or until a meat thermometer reads at least 150 degrees F.

For the sauce, combine sugar, cornstarch, vinegar, water, and soy sauce in a small saucepan and place on low heat. Stir occasionally until the sauce begins to bubble and slightly thicken.

Then remove from heat and brush the roast with glaze 3 or 4 times during the last 1/2 hour of cooking. Pour remaining sauce over the roast and serve.

Slow Cooker Country Ribs

Okay, to say that I am giddy with excitement over this post would not be an overstatement. As the title of this blog reads, I am Domestically Impaired so I’ve yet to hear the words, “Please make XYZ because I’ve been wanting that”, and things can get dicey when I’m behind the camera instead of in front of it. This recipe is completely created by me and photographed by me as well! It tasted great and the picture actually looks appetizing, don’t you think? I’m so proud.
I have two reasons for posting a recipe each Thursday night.

 1) I want to learn to cook by the time I am 50, and…

2) I participate in a Linky Party each Friday morning at about 7:00 AM CDT time – although you can post all weekend long. This party is hosted by several fellow bloggers: The Country Cook, 4 Little Fergusons, Meet Penny, The Better Baker, and Sunflower Supper Club.

I met Brandie The Country Cook first on FaceBook. I visited the Potluck a few times first then decided this would be a good way to challenge myself to cook at least one new thing each week. Then I would photograph it and post it for everyone to see. All I had to do was “like” them all on FaceBook or follow them on Twitter or Pintrest or their blogs. I do most of those things with all of them and each Sunday afternoon when everyone else is napping, I look at all the recipes deciding which ones I want to try out the following week or next holiday or whatever. I want to encourage each and every one of you to do the same. It’s fun, supportive, encouraging and sometimes exciting! I can hardly wait till morning when I can post this. So, here’s the recipe:

Slow Cooker Country Ribs

1 package Country Style Ribs
Salt & Pepper
2 Tablespoons cooking oil
1 Cup chicken broth
Barbeque sauce:
• 2/3 cup light brown sugar
• 1 teaspoon Hungarian paprika
• 1/2 teaspoon garlic powder
• 1 tablespoon white vinegar
• 1/2 teaspoon dried ground thyme
• 2/3 cup ketchup
• 1 tablespoon yellow mustard
• 1 tablespoon Worcestershire sauce
• ½ teaspoon cayenne pepper

Directions:
Put all ingredients into a pot, stirring together over medium heat. Cook to simmer and then take off the burner to cool.
Salt and pepper ribs to taste and brown in skillet with cooking oil.
When browned, pour chicken stock in slow cooker and place ribs on top.
Pour barbeque sauce over ribs making sure all sides are coated.
Turn slow cooker to high and cook for 4 hours.
Turn slow cooker to low and cook an additional 2-4 hours, until falling apart.
Remove from cooker to plate and cover with foil for about 20 minutes.
I served with fresh rolls and mashed potatoes pouring a little sauce over the potatoes as well.
As you can tell, this barbeque sauce is not thick or heavy and is even less thick because of the chicken stock. I don’t really like store-bought sauces because they are too sweet for me. This one is not. It is light and does not cover the taste of the ribs.
***if you don’t have a slow cooker, place in a 9×13 Pyrex dish, cover with foil and cook for 3 hours in a 300 degree oven, removing foil for last 30 minutes***

Dinner! Yum!

Kreativ Blogger Award

I want to thank Alicia at Boozed + Infused for nominating me for the Kreative Blogger Award.  This week has been an embarrassment of riches as far as honors go!  This is also a great way to get to know all your blogger colleagues.  So, 7 things about myself:

  1. I attended a Montessori-like private Catholic elementary school that did not give traditional grades.  I also did not sit in a traditional desk until I went to public in the 7th grade.
  2. I did not knowingly eat grapes from 1968 until 2001 in solidarity of the Great Grape Boycott.  (I was an odd child)
  3. When I was young, I played the piano, clarinet, flute, oboe and saxophone.
  4. I am left-handed.
  5. I have been to Sturgis, South Dakota three times, with the first time being with my parents in 1973.
  6. I have one tattoo that very few people have ever seen.
  7. I’m not much of a rule follower.
